Ingredients 

  • 1 block of duck foie gras 
  • 6 slices of Entremont Saint Mont des Alpes cheese (150g)
  • 4 slices of brioche bread
  • 12 g quince jam
  • Fleur de Sel
  • Red berries

Preparation

Use a star-shaped pastry cutter to cut out stars in the slices of brioche bread and put them in the oven for 5 minutes at 190°C. Cut 1cm thick slices of foie gras then use the pastry cutter to cut out stars in them. Put in the refrigerator. Use the pastry cutter to cut out stars in the Entremont Saint Mont des Alpes cheese slices.

To assemble, spread the quince jelly thinly on the toast stars, lay an Entremont Saint Mont des Alpes star, a foie gras star, and another Entremont Saint Mont des Alpes star on the toast. Decorate with the quince jam, fleur de sel, and a few red berries.
