Grilled Entremont Saint Mont des Alpes cheese
Ingredients for 1 serve
- 4 big knobs of butter
- 2 slices of traditional bread
- 2 slices boiled ham
- Shallot confit (or 250 g shallots, 2 tablespoons olive oil, 2 teaspoons brown sugar, 2 tablespoons vinegar)
- 1 slice of ham
- 4 slices of Saint Mont des Alpes cheese
Peel and chop the shallots.
Fry them in a little olive oil. Sprinkle with sugar. Add the vinegar and leave them to crystallise.
Butter one side of each of the slices of bread.
Turn one of the slices over (buttered side down) and lay 2 slices of Saint Mont des Alpes cheese on it, then place a slice of ham and the onion confit over the top, and finish with the rest of the Saint Mont des Alpes slices.
Top with the second slice of bread, buttered side out.
Heat a pan over a medium heat. Place the sandwich in it, pressing down on it with a spatula. Leave to brown for two minutes (put a lid on the pan), checking that it is not burning, then turn the sandwich over to brown the other side for 2 minutes, pressing the sandwich down using the spatula again.
