Ingredients

Cream cheese filling 

  • 40g grated Emmental cheese
  • 1 bunch of chives
  • 80g dried tomatoes
  • 80g Taggiasche olives  
  • 500g Philadelphia cream cheese or similar
  • 15g virgin olive oil
  • Espelette pepper
  • Ground pepper/fleur de sel 

Colourful grated cheese breading

  • 320g grated Emmental cheese
  • 80g pistachio nuts
  • 80g dried tomatoes
  • 15g olive oil
  • 15g grated parmesan cheese 

Preparation

Cream cheese filling 

Chop the chives and tomatoes and slice the taggiasche olives. Mix the cream cheese, grated cheese, tomatoes, olives, chives, and olive oil together. Season to taste and put in the refrigerator. 

 

Colourful grated cheese breading

Make a paste with the pistachio nuts, olive oil, Parmesan cheese, and 20g of grated cheese. Colour a third of the cheese with this paste. Blend the dried tomatoes. Mix with a third of the grated cheese. Leave a third of the cheese without any colouring for diversity in the colour of the drops. 

 

Put on a pair of gloves and make 1.5 diameter balls. Roll them in the different colours of cheese. Present them on a black plate to bring out the colour of the drops.
